Winters in Sendai often bury the fields under snow. You can still harvest things like green onions, but I wish there were more vegetables that could survive the cold season.

It looks fine from the outside, but part of it froze inside — not ideal for eating fresh.

When that happens, I peel it thinly with a vegetable peeler and make dried daikon strips instead.
